Описание

Ingredients

- 1 cup Jasmine rice
- 1 cup water
- 200g diced beef (I used rump cap)
- 1 tsp bicarbonate soda
- 1 tsp brown sugar
- 1 tsp sesame oil
- 1 tbsp light soy sauce
- 1 shallot, sliced thin
- 2 spring onions, whites in batons, greens sliced thin
- 2 tbsp beef tallow or high temp oil like peanut
- dark soy to serve

Method

1. Wash the rice well under cold water and then leave it to soak to 20 minutes, drain and add 1 cup fresh water then place on medium-high heat for 5 minutes.
2. Mix the beef, bicarbonate soda, sugar, light soy and shallots in a bowl and set aside.
3. After the rice has been cooking for 10 minutes, add the spring onion whites and beef to the top of the rice but do not stir the rice. Then place the lid back on and continue cooking over low heat.
4. After 5 minutes, add the beef tallow around the outside of the pot so it soaks into the bottom of the clay pot.
5. Continue to cook over medium-low heat until you hear the rice starting to crackle, this should take around 10-15 minutes.
6. Turn the heat off, then crack an egg into the centre and place the lid back on for another five minutes.
7. Sprinkle the spring onion batons around the top and add the sliced spring onion greens.
8. Enjoy!
