What is monosodium glutamate (MSG)? You can think of it as sodium (salt) PLUS a compound called glutamate. While sodium makes food taste salty, glutamate triggers our umami taste buds. Basically it makes food taste better.
Given that we’ve cooked all sorts of stuff covered in salt, this MSG rib roast was inevitable. The dry age brisket fat injection was a game time decision and the result was the most flavor packed bite imaginable (it reminded me of a bite of competition style bbq food).
