KHASSI TO PHASSI RECIPE:- Ingredients & Recipe below:
- Heat 5 tbsp oil in a kadhai and add in 1 kg mutton followed by 1 tbsp each of salt, red chilli powder and half tbsp garam masala powder. Fry on high for 8 minutes.
- Prepare a paste by blending together 2-3 turmeric roots aka kacchi haldi (use turmeric powder if unavailable), 3-4 tbsp watermelon seeds, 5 boiled onions, handful of mint leaves, 5-6 Kashmiri red chillies soaked in warm water, 2.5
inch cinnamon stick, 1 star anise, 1 black cardamom, 5 cloves, 1 mace and 1 tbsp black peppercorns.
- Add this paste in the kadhai followed by 2 tbsp ginger-garlic paste and fry on high for 6 minutes. Now add in 2 cups water giving it a good mix and closing the lid turning flame to low for an hour checking and stirring in between. Garnish with roasted crushed kasoori methi and chopped coriander leaves.
