On this week’s episode of Are You Ready Joanne Molinaro, I bring to you the story of a friend who changed my entire life—literally. As we’ve discussed in the past few weeks, we sometimes view getting vulnerable and leaning on our friends or others as “weak” or “cowardly.” But, healthy friendships can guard against a host of health problems, as well as loneliness and isolation. And, at least in my case, can completely change the course of your career.

This post is dedicated to the friend who changed the course of my entire life. Friends can do that, you know? I think there’s this belief that some of us carry that it’s somehow weak to rely on friendships, to accept help when it’s given to us. Or maybe we are suspicious of such offers, wondering “well, if you do this for me, what will I owe you?” I’m definitely one of those persons! Lucky for me, all Kim-Julie wanted from me was a book, and I delivered—three years later, but still!

At the end of the day, not all of us are built with an innate sense of confidence. I wish I could step forward with certainty day-in and day-out, but the truth is, I’m always second guessing the path I’ve chosen, and I am far more intimate with uncertainty than I am with assurance. As such, friends who believe in me—a little more than I believe in myself—have played a crucial role in achieving success and, more importantly, helping me to define purpose, without which I’d never know the kind of joy that I’ve claimed as my inheritance.

As for the sandwich featured herein, I used oyster mushrooms from my local farmer’s market, created a dredge using a blend of some all purpose flour, sweet white rice flour, and some of my favorite ramen seasoning. For the liquid portion, I used the same blend, plus a little vegan egg, and sparkling water. Dipped the mushrooms: DRY, WET, DRY before dropping them in some hot oil. For my sandwich dressing, I mixed gochujang, hummus, chopped bread and butter pickles, and some pickle juice—it turned out AMAZING. For a little extra crunch, I mixed together some julienned carrot and cabbage. Enjoy!
