Mutton Qurbani Kaleji: Ingredients & Recipe Below:-
- Marinate 800 grams mutton liver with handful of mint leaves, half tbsp each of red chilli powder, black pepper powder, Kashmiri red chilli powder, 3/4th tbsp coriander powder, 1 tsp each of turmeric, cumin powder, 1.5 tbsp ginger-garlic paste and 200 grams curd. Let it sit for 15-20 minutes.
- Heat 3-4 tbsp mustard oil in a pan/kadhai. To this add in 60 grams of mutton fat, 1 bay leaf, 1 tsp caraway seeds, 1.5 inch cinnamon, 3 green & 1 black cardamom and 3 cloves. Let the whole spices pop in the fat for 40 seconds.
- Prepare a paste by blending together 3 onions, 2 strings of curry leaves, 4-6 green chillies, 20 cloves of garlic and 2 inch ginger. Add this paste in the pan/kadhai and fry on high for 6 minutes. Next add in a paste of 3 tomatoes and fry on high for 5 minutes. Now add in the marinated mutton liver and fry on high for 5 minutes.
- Next add in 2.5 cups of hot water giving it a nice mix and close the lid turning flame to low for 5-6 minutes. Now add in a tsp each of garam masala powder and roasted crushed kasoori methi. Give it a nice mix for a minute then add in 1 lemon juice followed by 3/4 tbsp salt. Give it one final mix and garnish with chopped coriander leaves. Turn off the flame and close the lid for 5 minutes before serving.
