PERI PERI CHICKEN:
1 whole chicken (i actually recommend using legs/thighs tho!)

8 cloves garlic
3 shallots
1.5inch piece ginger (1tbs)
5 fresno chilis
2 habaneros (triple for super spicy)
3 bay leaves
16 sprigs of thyme
4tbs tomato paste
3tbs smoked paprika
3 lemons (zest of 3, juice of one)
3/4c olive oil
4tbs vinegar
2tbs sugar
4tsp salt

PERI PERI SAUCE:
2c marinade
4tbs vinegar
4tbs butter

- combine all the ingredients (NOT THE CHICKEN) and robo coup it or blend it together.
- save about 1/3 of the marinade
- rub all over the chicken as well as 3/4 tsp of salt per lb of chicken. Marinade for 24 hours

- roast the chicken at 425 it reaches the color you like then turn it down to 325.
- rest the chicken when the thickest part of the breast reads 150 and the legs read 165

- for the sauce, just simmer together until all mixed together!
